Michael:
Bagel and cream cheese (400-470 calories)
1 chocolate chip bagel (300-370 calories)
2 Tbsp. cream cheese (100 calories)
Jennifer:
Breakfast taco: delicious-style (266 calories)
1 egg + 2 egg whites; beaten together with a pinch of salt (102 calories)
1 small flour tortilla (81 calories)
1/2 small tomato (12 calories)
3 white mushrooms (18 calories)
1/2 cup baby spinach (5 calories)
1 green (spring) onion (8 calories)
1 tsp. olive oil (40 calories)
To prepare: Heat 1/2 teaspoon of olive oil in a skillet over medium heat. Add chopped veggies (except spinach) and saute until mushrooms start to brown. Add spinach and cook until wilts. Remove veggies from pan. Lower heat to medium-low. Add remaining olive oil. Pour egg mixture into skillet. Continuously stir and fold eggs until firm. 10 seconds before you think the eggs are done, remove them from the skillet. They're done. I assure you. They will continue cooking on the plate. Place them on top of the cooked veggies. Turn heat to high. Heat the tortilla for 20 seconds in the skillet. Assemble an awesome breakfast taco. Add hot sauce to give your breakfast a kick.
Crunching Numbers:
Cost for bagel and cream cheese ingredients: $7.82 (6 servings)
(includes 6 bagels and a tub o' cream cheese)
Cost per serving: $1.30
Cost for breakfast taco ingredients: $11.94 (4 servings)
(includes 1 dozen eggs, 2 tomatoes, 1 bunch spring onions, 1 bunch baby spinach, 1 package mushrooms, 1 package tortillas--all foods are organic! Also, I didn't include the cost of olive oil. The cost per teaspoon is some negligible amount I don't feel like calculating. Most people have it in their pantry.)
Cost per serving: $2.99
